Partial fix for #55

This pull request will merge 7d06a59 into the 2.1 branch. The second problem identified in #55 has to do with the value of REPLACE_ME_ORG in the JenkinsFile - it is being set to the default org and not what users select via the CLI. I am unclear how to fix that issue.

Could you try again after updating to jx 1.3.107 please? I think I fixed a similar issue to the default org problem earlier jenkins-x/jx@44937eb

@rawlingsj - okay I just did an upgrade on jx (see below), tried jx create quickstart -l go where I selected a different org for my github repo... It is still using the default repo (my user name) vs the org I selected.

Maybe this can be fixed through #57
