Resolve issue #???

Fixes iOS keyboard appearance not switching to dark when user explicitly sets app theme to dark

ThemeData(
   brightness: Brightness.dark,
)

Testing and Review Notes

Set system appearance to Light (Settings -> Display & Brightness)
Set ThemeData brightness to Brightness.dark

The keyboard should appear in dark mode as expected
