Have a consistent ordering in `data/networks.json` #54

It seems the order in the network list is a bit random, with Sepolia testnet at the end, amoy first, etc...

Would be easier to walk through the file with a logical ordering

Ethereum mainnet -> Ethereum testnet -> BSC mainnet -> BSC testnet -> ...

or

Ethereum mainnet -> BSC mainnet -> .... -> Ethereum testnet -> BSC testnet -> ...
