I think that would be a good foundation however Postal has many environment variables so you would probably be better off following the official install instructions from the docs https://docs.postalserver.io/getting-started/installation

The official install process uses docker compose behind the scenes anyway so it would be very similar.

At the very least, Postal has several processes so you need multiple containers running as per the install template: https://github.com/postalserver/install/blob/main/templates/docker-compose.v3.yml
