notes: user emails pinned in notes history

users can bcc or cc an email to a certain address that pins their email as a note in the notes log.

I found a solution for the app receiving emails here:
But it turns out it's only for Rails 6 so instead, a gem called "Griddler" seems the most promising so far. I've created a branch for this issue since my research shows it's a complex one and will continue working on it tonight.
