I'm gonna make this short, but I do believe that there should be settings to configure who can and how they can edit a repository's wiki, ideally on the repository's own settings as to not expose the wiki's own repository.
In particular, I had rules and rulesets in mind to limit which and how contributors can contribute to the wiki. Perhaps even allow for a separate list of contributors for the wiki.
Alternatively, a "dirty" way of getting something similar without adding a "huge" load of options on the settings, it would be to only allow GitHub Actions to do the deployment, that way, one could have a folder or branch from which the wiki is generated and then pushed via GitHub Actions to the wiki's own repository.
