Jest 28 now requires the jsdom environment to be installed separately (https://jestjs.io/docs/upgrading-to-jest28#jsdom) and I found I had to add /** @jest-environment jsdom */ at the start of the test files. It seems cleaner to simplify these tests so that they test the returned string directly, instead of storing it in the DOM.

Fixes #12, and updates devDependencies so that tests are run against Junit28.
