go-car-mirror introduced new config options. Make sure we have all of them supported in kubo-car-mirror's plugin config, with reasonable and safe defaults if missing. Also make sure go-car-mirror's default config is safe. Last I looked at this it had some defaults that related to mock hashing, which I believe should change.
