Build documentation site for v2

The existing readme is out of date in relation to version 2. Build a new documentation site using something like:

• Docusaurus
• Astro
• Nextjs
• Sveltekit

Some nice features would be:

• searchability
• version-based paths to make it clear what is available in given version

Startlight by astro looks like a good option, apart from the lack of support for versioning - but that might be addressed by the time I have multiple versions to document 😛
