Would be nice if this supported or documented how to setup a configuration with multiple cores.

Thanks, hope you can pioneer this. It's not different from any other solr environment.

Also note that ddev/ddev-solr is the preferred add-on for Drupal folks per the maintainer of search_api_solr.

gotcha, i was following the docs which doesn't mention that.

There's a fair bit of confusion between those. ddev-drupal9-solr (this repo), soon to become ddev-drupal-solr is the traditional setup. ddev-solr is the "modern" approach championed by the maintainer of search_api_solr. I wish there weren't so much confusion. There's also a TYPO3 variant in the works :(
