[opentelemetry] Ease process of updating images #427

Context

When updating the collector image there are multiple steps that needs to be documented and improved:

Update Collector image e.g. here: https://github.com/cloudoperators/greenhouse-extensions/blob/main/Dockerfile.otel-collector
Update Operator image with the linked CRDs here: https://github.com/cloudoperators/greenhouse-extensions/blob/main/opentelemetry/chart/values.yaml
Update Chart.yaml
Dep up to update Chart.lock

Acceptance Criteria

ease the process of updating having less files to touch for an update
