Possible to set UTF-8 on Proxy Service?

I'm trying to set up a simple proxy in Mockey to a webservice that returns XML in UTF-8. The recorded response in Mockey has the wrong encoding so some of the characters received are not correct. I saw in another issue that you can set the content-type in the HTTP headers section of a scenario, but I'm not sure how I would do this for a proxied service.
