Feature Request: allow sort order to be set as an alternative to toggle

Currently you can only toggle between the sort orders. It would be nice to be able to set the sort order for a column directly,

Hey, while the default plugin only supports toggling of a column's sort order from the props, it's still possible to update it directly via plugin state.

We can also modify the addSortBy plugin to provide an additional function on the props if that's desired!
