I had figured this out with another github posting binary from years ago. But it's been a while, and I only use nyuu now. Is there a way to repost just the missing segments, and not the whole file, so that they will show as complete on the server?

You mean missing articles from an NZB?

If so, it's currently not supported by Nyuu. Nyuu does have the ability to dump failed posts (can only be done during an upload) and retry submitting them, but it's probably not what you want.

Is there a way to automate that? Or would I be better off just using the in-built retry option?

The one reason it would be good to dump them is that no matter how many failures you get, you could still try again later.

Posts are only dumped if Nyuu exhausts all its retry attempts. There's nothing special about automating it - it depends entirely on how you wish to do it.
