Thank you for your efforts in developing and maintaining the react-native-health package. I have been using this package for tracking workouts and syncing data with Apple HealthKit, and it has been a great experience so far.

However, I noticed that there is no direct support for adding sub-activities or workout events (e.g., segments of a multisport workout like a triathlon) to a workout. In Apple’s HealthKit, it is possible to break down a workout into discrete activities or intervals, such as different phases of interval training or various stages of a triathlon (swim, bike, run). This functionality allows users to more accurately track and analyze their workouts.

For example, during a triathlon, a user might want to record separate segments for the swimming, cycling, and running parts of the workout. It would be helpful to store these segments as events within the same workout session, allowing for easier analysis and better representation of the workout in Apple Health. I am adding a picture of a better understanding of what I want.Please see "workout activities" in the image, i want to add sub-activities to a workout just like this

I'm willing to contribute to adding this feature if someone can point me in the right direction regarding the library's structure.
