Existing implementations:

There is a set of examples of LDES-es described using DCAT-AP on the data portal of Flanders https://www.vlaanderen.be/datavindplaats/catalogus?text.LIKE=ldes &types.CONTAINS_ANY=service
There is an early DCAT example that is in production for cultural heritage data here: https://apidg.gent.be/opendata/adlib2eventstream/v1/
