MistralAI has updates its API which lead to a bug when calling it. We should use https://github.com/langchain4j/langchain4j as it has been recommended by MistralAI and the one OpenAI is recommending is no longer maintained.
https://github.com/langchain4j/langchain4j seems well liked and supports both of the engine we currently supports and could maybe help support more easily.
