- open System Preferences.app
- select Keyboard
- select the Shortcuts tab
- select App Shortcuts from the left column
- tap + to add a new one:
- set Application: to All Applications
- set Menu Title: to match exactly the menu entry targeted
- set Keyboard Shortcut: to your taste
- tap Add
