Access

1. open System Preferences.app
2. select Keyboard
3. select the Shortcuts tab
4. select App Shortcuts from the left column
5. tap + to add a new one:
   1. set Application: to All Applications
   2. set Menu Title: to match exactly the menu entry targeted
   3. set Keyboard Shortcut: to your taste
   4. tap Add
