Would it be possible to create some sort of a status or sensor in home assistant when the pellets in the stove are empty. This would allow an automation to notify this issue to stove user. In case this already exists, please advise who I can use it.

I invite you to look at fork https://github.com/antibill51/rika-firenet-custom-component
where empty status is available and repository contains automation rule examples, with kg tracking in tank and switch to notify for bag addition.
