Updater window ignores "skip this release"...

I want to double down on this. Could you, maybe, change it to "remind me tomorrow" or similar.
I had a presentation yesterday and had to click away the update window every 30 minutes or so.

Will investigate. Have you tried unchecking "Check for updates" in General Preferences in the meantime?
