Although true collision detection on the m/kg/s scales is going to be very difficult to handle properly, the high speed stuff can easily be handled by modelling everything as a sphere (or line in the case of the terrain) and applying basic physics. This shouldnt prove too difficult to implement, although each vessel checking every other vessel will probably prove tedious.
